ALOO GOBI

Ingredients

  • ¼ cup GREENSFUD OLIVE OIL
  • 1 medium onion, chopped
  • 1 ½ teaspoon GREENSFUD GARLIC POWDER
  • 1 teaspoon GREENSFUD CUMIN SEEDS
  • 450 grams diced tomatoes
  • 2 tablespoon GREENSFUD COCONUT MILK POWDER
  • 2 tablespoon GREENSFUD CORIANDER POWDER
  • 1 tablespoon GREENSFUD HIMALAYAN PINK SALT
  • 1 tablespoon GREENSFUD TURMERIC POWDER
  • 1 tablespoon cayenne pepper
  • 1 teaspoon grounded GREENSFUD CINNAMON
  • 1 teaspoon GREENSFUD DRIED GINGER POWDER
  • 1 teaspoon ground GREENSFUD CARDAMOM
  • 3 large potatoes, peeled and cubed
  • 1 medium head cauliflower, chopped into bite size pieces
  • 450 grams chickpeas, drained
  • 2 tablespoons GREENSFUD GARAM MASALA

 

Instructions

  1. Onion is added to oil that is heated in a big pot over medium-high heat. Add cumin and garlic after cooking for 4 minutes or until soft. Keep cooking the onion until it starts to turn brown.
  2. Add the coriander, salt, turmeric, cayenne pepper, cinnamon, ginger and cardamom along with the tomatoes and coconut. After stirring while the mixture is heating up, add the potatoes, cauliflower and chickpeas. Mix well. Lower the heat and cover.
  3. Simmer for 45 to 1 hour, or until the potatoes are soft (this will depend on the size of the potato chunks). Garam masala should be added, stirred, and cooked for an additional five minutes and serve it with basmati rice or better with breads such as roti, naan.
