TANDOORI FISH WRAP

Ingredients

  • 300g Boneless rawas fish fillets, cut into 1-inch pieces
  • 4 Whole wheat tortillas
  • 1 cup Hung yogurt
  • GREENSFUD HIMALAYAN PINK SALT to taste
  • ½ tsp GREENSFUD CHAAT MASALA
  • 1 tsp GREENSFUD GARAM MASALA POWDER
  • ½ tsp GREENSFUD DRIED FENUGREEK LEAVES (kasuri methi), crushed
  • 1 ½ tsp GREENSFUD RED CHILLI POWDER
  • 1 tsp Ginger-garlic paste
  • 1 tbsp Lemon juice
  • 1 tbsp GREENSFUD MUSTARD OIL
  • ½ tsp GREENSFUD TURMERIC POWDER
  • GREENSFUD OLIVE OIL for drizzling
  • Butter for basting
  • Mint mayo for drizzling
  • Iceberg lettuce leaves as required
  • Carrot, peeled and cut into thin strips, soaked in cold ½ medium
  • Cucumber, peeled and cut into thin strips, soaked in cold 1/2 medium

Instructions

  1. To prepare the marinade, combine the yoghurt in a bowl with the salt, chaat masala, garam masala, dried fenugreek leaves powder, red chilli powder, ginger garlic paste, 12 tsp lemon juice and mustard oil. Stir together.
  2. Add the remaining lemon juice, salt, turmeric powder, and fish fillets to another bowl and stir to combine.
  3. To this marinade, add the fish and gently stir to coat each piece. Cover and place in the refrigerator for an hour to marinate.
  4. Preheat a grill pan without sticking. Keep a small space between each piece of fish as you thread 3 pieces onto each skewer. Place the fish skewers on the grill pan, brush them with oil and cook over medium heat, turning the skewers occasionally, until golden grill marks emerge on both sides. Butter should be occasionally basted onto the fish fillets.
  5. On each tortilla, spread the mint mayo sauce. Sliced carrot, cucumber, and lettuce leaves should be placed on top. Place the pieces of cooked fish in the center and roll the tortillas up. Place each roll on a piece of paper, roll it up tightly, only covering the bottom and secure it with a thread.
  6. Arrange the rolls on a serving platter and serve hot.
