GRILLED TANDOORI CHICKEN PATTIES

Ingredients

  • 1 kg boneless, skinless chicken thighs
  • 1 teaspoon GREENSFUD GARLIC POWDER
  • 1 tablespoon ground GREENSFUD CUMIN
  • 1 tablespoon paprika
  • 1 teaspoon GREENSFUD CORIANDER POWDER
  • 1 teaspoon GREENSFUD TURMERIC POWDER
  • ¼ teaspoon cayenne pepper
  • ½ tablespoon GREENSFUD DRIED GINGER POWDER
  • ½ cup plain yogurt, divided
  • Juice of 1 lemon, divided
  • 1 jalapeño (Red pepper) stemmed and seeded, finely minced
  • ¼ cup fresh mint leaves, finely chopped
  • GREENSFUD HIMALAYAN PINK SALT
  • 4 naan flatbreads, pita or burger buns
  • 1 medium cucumber, thinly sliced lengthwise into ribbons
  • Fresh cilantro leaves and tender stems, for serving
  • Thinly sliced red onion (for serving)
  • sliced tomato (for serving)
  • green lettuce (for serving)

Instructions

  1. Chicken thighs should be cut into pieces. Use a meat grinder to ground, and then transfer to a big bowl. Add garlic powder to the chicken.
  2. Add 2 tablespoons of the yoghurt along with the cumin, paprika, coriander, turmeric, cayenne and ginger. Add the juice of one-half of a lemon. Stir thoroughly. Cover with plastic wrap, refrigerate for at least one hour and no more than six.
  3. In a bowl, combine 2 tablespoons of yoghurt, 1/4 teaspoon of garlic powder, and the juice of the last half of the lemon. Add salt and mix in the mint and jalapeno. placed aside or refrigerated.
  4. Place the cooking grate on the grill, close it, and let it heat up for five minutes. Grill grate should be cleaned and oiled.
  5. Create 4 patties out of the chicken mixture (or 6, if you prefer smaller patties). Place the patties immediately on the hot side of the grill after liberally salting them all over. Cook for 6 minutes on each side, or until an instant-read thermometer inserted in the center registers 165°F (74°C).
  6. On the grill, toast the burger buns or naan. Then, place the chicken patties, lettuce, and slices of cucumber in the naan or hamburger buns. Sprinkle fresh mint and coriander leaves on top of the patties after spooning the yoghurt sauce over them. If using, add tomato and onion on top before serving.
