BANANA BREAD

Ingredients
- ¼ teaspoon GREENSFUD HIMALAYAN PINK SALT
- 1 teaspoon baking soda/bicarbonate soda
- 1 ⅔ cups all-purpose flour Maida
- ½ teaspoon ground GREENSFUD CINNAMON
- 2 eggs
- 1 ¼ cups sugar ground for 30 seconds in a spice grinder.
- ½ cup GREENSFUD COCONUT OIL
- 1 teaspoon GREENSFUD VANILLA ESSENCE
- 2 tablespoon yoghurt Dahi
- 4 medium sized bananas mashed
Instructions
- A 180°C oven is to be used. Large 13.5 x 23.5 cm loaf pan should be greased and lined with parchment or baking paper.
- In a sizable bowl, combine the flour, salt, baking soda and cinnamon; set aside. The bananas should be put in a small bowl. Add the vanilla and yoghurt after mashing with a fork. Cover and leave out.
- In a big bowl, combine the sugar and the eggs. Using an electric whisk, beat the mixture for 5 to 8 minutes or until it is very thick and pale and forms a ribbon when the beater is raised. Use a stand mixer instead, set to medium-high speed.
- Lower the speed and pound a steady stream of oil in. Slowly incorporate the banana and yoghurt combination.
- With a spatula, gently incorporate the flour and cinnamon mixture into the wet mixture after adding it. Ensure that the mixture is well-combined. You can now include any mix-ins.
- Fill loaf pan with ingredients and bake for 1 to 1 14 hours or until spear comes out clean. If bread is browning too quickly or excessively, bake it with a light foil cover.
- Shortly cool in the pan before turning out onto a rack to cool.
Notes
- The banana must be ripe. It enhances the taste.
- Mix in various items in banana bread like walnut, shredded coconut, chocolate chips, dried fruits, raisins etc. Before including mix-ins (such as nuts, dried fruit, and chocolate chips) in the mixture, make sure to lightly dust them with flour. This action is required to avoid sinking.
