CREAMY HUMMUS PASTA

You can have all the creaminess you want in a pasta meal with this incredibly delicious Creamy Hummus Pasta without using any dairy at all. A quick and delicious pasta recipe that will save your stressful weeknight. This recipe is quite flexible; leave out the chicken to make it vegan and experiment by adding different vegetables like roasted broccoli or cauliflower.

Ingredients

  • 1/3 cup GREENSFUD SUN DRIED TOMATO
  • ½ teaspoon GREENSFUD GARLIC POWDER
  • 2 tablespoons tomato paste
  • 2 teaspoons smoked paprika
  • 1 teaspoon GREENSFUD DRIED OREGANO
  • 1 teaspoon GREENSFUD RED CHILLY FLAKES
  • 450 grams pasta of your choice
  • 4 cups water or broth, plus more as needed
  • 1 cup hummus, homemade or store-bought
  • 1/2 cup fresh basil, chopped
  • Zest and juice of 1 large lemon
  • GREENSFUD HIMALAYAN PINK SALT TO TASTE

Instructions

  1. The sun-dried tomatoes and garlic should be sautéed for approximately a minute, until aromatic, in a big saucepan over medium-high heat. Add the tomato paste, smoked paprika, oregano and red pepper flakes. Cook, stirring frequently, for about 3 minutes or until the tomato paste is dispersed evenly and starting to color.
  2. Place the dry spaghetti in the bowl and add the flavored oil. If more liquid is required to completely soak the pasta, add a little more water or broth to the container before covering. Boil for 8 to 10 minutes or until the pasta is al cooked and most of the water has been absorbed.
